One of My Favorite Meals!

Welcome to Foodie Friday, hosted by Gollum at Designs by Gollum. Our hostess will be presenting something delicious, as will many other participants. Be sure and stop by her site
(NOTE: I just noticed the topic is Foodie Trainwrecks....Oops...this is a Foodie Train that heads right to the destination - delish! If you need a Foodie Trainwreck, go back to my post on 4/12 - The Easter Lamb Cake and you will see the Lamb Trainwreck!)
Last week I posted my marinade for pork tenderloin, but didn't include the sauce. Fortunately, my daughter served one of our favorite meals on Mother's Day (which includes the pork tenderloin) and I can give you a picture, along with this fabulous recipe that she got from her mother-in-law.

Sauce for Pork (also good with turkey!)
12 oz. jar cherry preserves
1/4 cup red wine vinegar
2 Tablespoons light corn syrup
1/4 teaspon each of cinnamon, nutmeg, cloves & salt

Heat above until it boils. Simmer 2 minutes. It will thicken a little as it cools. Put sauce over meat and sprinkle with 1/4 cup toasted slivered almonds(not in this picture - optional).

It was served above with brown rice (cooked with beef broth & butter!), steamed broccoli, and Sister Shubert cinnamon rolls.

Dessert is caramel cake! (recipe from Paula Dean - can you say "butter"!)

In case you dishaholics are wondering, the pattern is Villeroy and Boch, and, I am sad to say, it is discontinued! Fortunately, daughter has 10 place settings, which she likes to mix with some all white pieces. Hope you have a chance to try this yummy sauce....I know you will love it! Don't forget to go by Gollum's at Designs by Gollum and see what's cooking! Bon Appétit! Linda

You're right this is not a wreck at all. The sauce sounds so good. We do pork chops all the time - so it's nice to have something to change'em up once in a while! ~ Robyn
